A wholemeal tortilla with a generous helping of tahini and stir-fried vegetablesย makes a filling vegan lunch that’s packed with iron
Ingredients
- 2 tbsp tahini
- juice ยฝ lemon
- 1 large wholemeal tortilla wrap
- ยฝ x 265g pack stir-fry vegetables (without beansprouts)
- ยฝ tbsp sesame seeds
Method
- STEP 1
Mix the tahini with theย lemon juice and 1 tbsp water to form a paste. Spread on the base of the wholemeal tortilla wrap with some seasoning. Scatter over the stir-fry vegetables and sesame seeds. Roll up in a tight wrap and halve.
